What distinguishes them is the leaf's age at harvest and the drying method used afterward, as those factors alter the balance of alkaloids in the leaf, and that is the key difference between red, green, vs white kratom. They all hail from the same plant, but contain different profiles (and colors) depending on how and when they are harvested.

A kratom leaf changes color as it grows. Early on, the central vein runs pale green, and the leaf holds a high concentration of mitragynine, the main alkaloid behind kratom's forward profiles.
As the leaf matures, the vein darkens and a second group of alkaloids, including 7-hydroxymitragynine, builds up alongside it. Pick the leaf early, and you get one balance. Leave it on the tree, and you get another. Simple. The effects are similar, to a point, but each is nuanced. More on that, later.
The drying process does the rest after the leaf is harvested. White leaves are dried indoors with no sun exposure, which preserves the young-leaf chemistry. Red leaves are dried in sunlight or fermented, which drives oxidation and pushes the profile toward the slow end. So, in summary, kratom colors are largely decided by the time at which the leaf is harvested, as the leaves change color slightly with each passing day. They always stay green but with subtle changes to the stems or veins.
But what difference does this make to you, as a consumer who is deciding which color to purchase? Let's break down the three colors in more detail, starting with white.
As the youngest of the three options, white kratom leaves are picked while the central vein is still pale green and the plant is producing mitragynine at close to full concentration. Drying occurs indoors, away from sunlight, so very little oxidation occurs.
Again, for the avoidance of all confusion, the leaves are not white, perse, but a lighter shade of green. When ground into powder, they approach a color that is much closer to white than other kratom colors.
In practice, white reads as the most forward of the three colors. Onset is usually fairly quick ( inside half an hour), and the profile is alert, bright, and clear rather than heavy. It's a great fit when you need a pick-me-up in the morning, or any stretch of the day that demands a little extra focus.

Green kratom is the most popular option of the three, made from leaves that are harvested at mid-maturity - after the young-leaf stage, but before full ripening - then dried with a hybrid method that starts indoors and finishes with a short period in shaded outdoor light. That touch of daylight allows a little oxidation without pushing the leaf all the way to red.
The result is the most flexible of the three profiles. Green carries some of white's forward character but with more staying power, and it lacks the deep settling quality of red, as described below.
Onset lands in the middle, and the effect holds for a moderate stretch. This is why green is often recommended as a first strain, as it’s forgiving enough that a new user is unlikely to get it badly wrong.
Green Malay, Green Maeng Da, and Green Borneo are common starting points for many people buying green kratom for the first time.
Red kratom is the most mature of the three. The leaves are left on the tree until fully ripened, by which time the veins are clearly leaning toward a darker red. At this stage in the maturity, the alkaloid balance has shifted toward 7-hydroxymitragynine and away from peak mitragynine. Drying is done in direct sunlight (or through a fermentation step), both of which deepen the oxidation and lock in the slow character.
You might describe red as the evening color, perfect for those who want to jump on the couch and relax. Onset is quite gradual (at least compared to white), and the effect lasts long, often well past the five-hour mark.
Where white feels quite forward, and green feels middle-of-the-road balanced, red feels settled and grounded. It might be described as more sedentary, although that feels like a harsh term - a more loose description would be a heavy chill. Owing to that, it’s usually more suited to the back end of the day, when the work is finished, and a movie beckons.
